Eczema-Friendly Roast Turkey with Cranberry & Pistachio Stuffing.

Looking for a simple, eczema-friendly festive main that’s perfect for Christmas, family gatherings or a cosy Sunday roast? This Roast Turkey with Cranberry & Pistachio Stuffing is a lighter take on a classic, using a ready-to-roast turkey breast filled with a vibrant mix of spinach, cranberries and pistachios. It cooks in under an hour, slices beautifully, and brings a delicious balance of savoury and sweet to the table. It’s the perfect fuss-free centrepiece for your next celebration, especially for families looking for gentle, low-irritant meal ideas.

Ingredients

  • 250g frozen chopped spinach, thawed

  • 1/3 cup (45g) dried cranberries, chopped coarsely

  • 1/3 cup (45g) shelled pistachios, chopped coarsely

  • 1kg frozen ready-to-roast turkey breast, thawed

  • 2 tbsp olive oil

  • 6 fresh thyme sprigs

  • 1 cup (250ml) salt-reduced chicken stock

  • 2 tbsp brandy

  • Extra pistachios, for serving


Method

  1. Preheat oven to 180°C (160°C fan-forced).

  2. Squeeze spinach to remove excess liquid; place in a bowl. Stir in cranberries and pistachios; season with salt and freshly ground black pepper.

  3. Rinse turkey and pat dry with paper towel. Place on a large sheet of baking paper. Slice the breast in half lengthways, without cutting right through; open out flat.

  4. Spoon the stuffing over one cut side of the breast, then fold the other side over to enclose. Brush turkey with olive oil, season with salt and pepper, and sprinkle with thyme sprigs.

  5. Wrap the baking paper around the turkey and secure with kitchen string. Place on a large oven tray and roast for 40 minutes.

  6. Remove string and peel back paper. Brush the surface of the turkey with some of the cooking juices. Roast uncovered for about 10 minutes or until golden. Stand, covered, for 10 minutes.

  7. Meanwhile, combine chicken stock and brandy in a small saucepan. Simmer uncovered until reduced by half to make a simple sauce.

  8. Slice the turkey and serve drizzled with the sauce, topped with extra pistachios if desired.
