Spinach and feta frittata sliced and served with fresh salad

Ingredients

  • 1 tsp olive oil

  • ½ small brown onion, finely sliced

  • 1 tsp garlic

  • 250 g baby spinach

  • 4 eggs

  • ½ cup crumbled feta cheese

  • Salt and pepper to taste

Method

  1. Preheat your grill to medium high heat.

  2. Heat olive oil in a non stick frying pan over medium heat.

  3. Add the onion and cook until lightly browned.

  4. Add the spinach and cook for 1 to 2 minutes until wilted. Remove from heat and allow to cool.

  5. In a bowl, beat the eggs. Stir through the cooled spinach mixture and feta. Season to taste.

  6. Return the pan to medium heat and pour in the egg mixture.

  7. Gently stir until the base starts to set, then turn off the heat while the top remains slightly runny.

  8. Place the pan under the grill for 2 to 3 minutes until golden and fully cooked.

  9. Carefully invert onto a plate and serve warm or cold with a fresh side salad.

Tips

  • Swap feta for a dairy free alternative if needed

  • Add herbs like parsley or dill for extra flavour

  • Great for meal prep and lunchboxes

  • Serve with wholegrain toast or a light salad

*As with all foods, individual triggers can vary. If you or your child have food sensitivities, adjust ingredients as needed.
